Granny’s Tarts


Sweet shortcrust pastry

  • 150g plain flour
  • 75g cold butter
  • Pinch of salt
  • 1 free range egg yolk
  • 50g icing sugar
  • Cold water to bring together

For the various fillings

Coconut tarts

  • 60g butter
  • Raspberry jam
  • 60g caster sugar
  • 60g desiccated coconut
  • 30g self raising flour
  • 1 egg

Bakewell tarts

  • 60g butter
  • Raspberry jam
  • 60g caster sugar
  • 30g ground almonds
  • 30g self raising flour
  • 1 egg
  • Few drops of almond essence
  • Flaked almonds for the topping

Jaffa cake tarts

  • Orange marmalade
  • Melted chocolate
  • 15g butter
  • 120g melted chocolate
